Ginger Coconut Rice

Melt 2 Tbl butter in pan.
Add:
1/4 cup raisins (optional)
1/3 cup red bell pepper (thin strips)
1/3 cup green onions (chopped or same size as peppers)
2 Tbl parsley
1 tsp ginger

Saute until tender.
Add:
2 cups cooked rice (cook in chicken broth)
1/3 cup toasted coconut
8 oz can of pineapple tidbits (or fresh pineapple)
