Cream Puffs


Ingredients:
2 tsp baking powder 
1 cup water
1/2 cup butter
1/2 tsp. salt

1 cup flour 
4 eggs
Boil butter and water. Stir in all of the flour at once. Stir vigorously over low heat until mixture leaves pan and forms a ball (about 1 minute). Remove from heat. Beat in eggs one at a time. Beat mixture until smooth and velvety. Drop on ungreased baking sheet 3" apart. Fill with custard (see recipe below).

Custard Filling 
1/2 cup sugar 
1/3 cup flour 
1/2 tsp salt
2 cups milk 
4 egg yolks 
2 tsp vanilla
Mix sugar, flour and salt in saucepan. Add milk. Cook, stir until it boils. Boil for one minute and remove from heat. Stir 1/2 mixture of egg yolks. Blend into mixture in pan. Bring just to a boil.
Optional: Top with chocolate syrup or frosting
